Gingered Pork Loin with Orange Marmalade Sauce
¾ cup dry white wine
2 AuerPak® Brand shallots, minced
1 two-pound pork loin
1 teaspoon salt
½ teaspoon pepper
1 tablespoon AuerPak® Brand grated ginger root
1¾ cup orange marmalade
Combine wine and shallots and pour into shallow 12” roasting dish.
Rub loin with salt, pepper and ginger root and place in roasting dish. Bake at 350 degrees, basting occasionally with pan drippings, for 1½ hours or until pork reaches an internal temperature of 160 degrees. Remove from oven and let rest for 10 minutes.
In a small saucepan over medium heat, combine orange marmalade and 2 tablespoons pan drippings. Heat through. Serve loin with orange marmalade sauce. Makes 4 servings.
