Braised Baby Carrots and Sugar Snap Peas
1 lb. AuerPak® Brand baby carrots, pared, trimmed
1 teaspoon sugar
2 tablespoons unsalted butter
6 oz. AuerPak® Brand sugar snap or snow peas, trimmed and stringed
Salt and freshly ground pepper to taste
Place carrots, sugar, and 1 tablespoon butter in a medium saucepan and add water to barely cover the carrots. Simmer covered until carrots are crisp-tender, 8-10 minutes. Season with salt and pepper.
Heat remaining 1 tablespoon butter in a medium skillet over medium heat. Add peas and cook, stirring and tossing constantly, until tender and bright green, 2-3 minutes. Season with salt and pepper.
Combine carrots and peas in serving dish. Serve hot.
