Tricolor Salad

Make the Tricolor Salad a delight for both the eye and the palate.

Serves 4

Ingredients

2 large AuerPak® Brand endives
1 small head of red leaf lettuce
1 small head of green leaf lettuce
1 small bunch of watercress

Dressing

2 tablespoons balsamic vinegar
½ teaspoon salt to taste
¼ teaspoon pepper to taste
⅓ cup olive oil
3 tablespoons orange juice
1 tablespoon mustard
Juice of one large garlic clove

Directions

Combine the dressing ingredients and pour them over the bowl of cleaned salad ingredients. Toss salad and serve.

This recipe is only one version. Depending on your fantasy and taste preferences, several others are possible. Combine Belgian endive with radicchio, oakleaf lettuce, or red beets for the red ingredients, with arugula, romaine lettuce, mache, or Boston lettuce for the green ingredients.


Green Beans and Sun-Dried Tomato Toss

Ingredients

1 lb. AuerPak® Brand baby potatoes any color or assorted, halved or quartered 

12 oz. fresh green beans, trimmed and cut into 1-inch pieces (about 2 cups)
¼ cup AuerPak® Brand sun-dried tomatoes in olive oil, drained and chopped
⅓ cup bottled fat-free Parmesan or Italian salad dressing

4 cups pre-washed Italian salad greens
4 slices bacon, crisp-cooked and crumbled (optional)

Directions

Bring a large pot of salted water to boiling; add potatoes and green beans. Cook, covered, until tender, about 10 to 12 minutes; drain.

Return potatoes and beans to pot. Add dried tomatoes and salad dressing; toss gently until well coated.

Place greens in large serving bowl. Stir in potatoes and beans. Sprinkle with bacon pieces, if desired.


Shrimp and Snow Pea Salad with Cashews

Ingredients

¾ pound AuerPak® Brand snow peas
2 tablespoons water
1 pound shrimp, cooked, peeled, and deveined
1 cup finely chopped celery
½ cup mayonnaise
⅛ teaspoon curry powder
½ cup cashew nuts
1 three oz. can Chow Mein noodles
leaf lettuce

Directions

Trim snow peas and slice diagonally into thirds. Arrange in microproof dish, sprinkle with water and cover with plastic wrap. Microwave, for 6 minutes, stirring occasionally or until crisp-tender. Drain and cool.

In a large bowl, combine snow peas, shrimp, celery, mayonnaise and curry powder. Chill.
Just before serving, add cashew nuts. Serve on leaf lettuce and pass the Chow Mein noodles. Makes 4 servings.
